The Harvest
Last
summer was a bumper harvest, not just for us but generally all over Greece.
The wet spring and long dry warm summer meant that the grapes had plenty of
sun and were able to mature well on the vine. Our restaurant vine
yielded almost 1 tonne of home-made wine that we will be serving this
summer! on top of this we made similar quantities of red and rose wine
and as we write it is quietly maturing in our winery.

Crushing the Grapes
So far so good,
over the next few weeks we will be cleaning the fermentation vats of
sediments that are a by-product of the wine making process and testing once
again the strength and acidity of the wine. As Sebastian keeps telling
us, our wine is a living member of our family and needs lots of TLC in order
to keep us happy during the summer!
